PERDÓN is the result of pure obsession.
We already had a Carbonara: consistent, loved, trusted. But “good” isn’t a finish line. Everyday for a year, our team went back into the kitchen, adjusting, refining, questioning every single detail. Not to fix it, but to evolve it - chasing the exact expression, flavour and texture of what the perfect Carbonara should be.

When we finally achieved it, we did what felt right: invited everyone who had ever ordered our previous Carbonara to try the new one, on us.
